Oh yea, I loves me some tacos

It’s got pork, salsa and chocolate in it. Did you hear that? It’s got chocolate in it. I often overcook a yam and mash it up along with some black beans and wrap it all up in a corn tortilla. Yum, yams. OK, maybe not your thing. Skip the yams if you want, but perhaps you should think about eating more orange vegetables. Seriously, when was the last time? I thought so…

Recipe: Slow Cooker Pulled-Pork Tacos

Ingredients

  • 2 cups store-bought salsa, plus more for serving
  • 2 tablespoons chili powder
  • 2 tablespoons dried oregano
  • 2 tablespoons unsweetened cocoa powder
  • Salt
  • 1 – 2 1/2-pound boneless pork butt or shoulder, trimmed of excess fat
  • 18 corn tortillas
  • 1/2 c fresh cilantro
  • 3/4 c sour cream
  • 1 lime, cut into wedges

Instructions

  1. In a 4 to 6 quart slow cooker, combine the salsa, chili powder, oregano, cocoa and 1 teaspoon salt. Add the pork and turn to coat.
  2. Cook, covered, until the meat is tender and pulls apart easily, on high for 4-5 hours or low for 7-8 hours.
  3. Twenty minutes before serving, heat oven at 350 F. Stack the tortillas, wrap them in foil, and bake until warm, about 15 minutes.
  4. Meanwhile, using 2 forks, shred the port and stir into the cooking liquid, serve with the tortillas, cilantro, sour cream, lime and extra salsa.

Oh, I love the yam, black bean and tortilla suggestion. I make yams for Sam all the time, and I’m definitely going to try that! Three cheers for orange vegetables!

I will definitely be trying both the recipe and the yam and black bean wrap creation. Instead of sour cream we love creme fresh (sp?) at our house. It’s full fat, but oh soooo yummy.

Looks yummy. Thought of you today when I made a batch of squash soup. Scoured the cabinet for coconut milk–it’s just missing something–no luck so I think I’ll be making a trip to the store. (Probably not Whole Foods)

This is an awesome recipe and so easy! After Katherine first made this for me, I couldn’t stop thinking about it (okay I did think of some other things but not much.)
Per Katherine’s tip, I located it on Real Simple’s website and was so pleased at how easy it was! Double yummmmm!!
